Food Composition Data: A User's Perspective
Report of a conference held in Logan, Utah, USA, 26-29 March 1985. Report and recommendations of the conference; Experiences with food composition data; The uses of food composition data; Managing food composition data; International food composition data; Other considerations.

Journal of Food Composition and Analysis
The Journal of Food Composition and Analysis is the official publication of INFOODS, and is co-sponsored by The United Nations University and the Food and Agriculture Organization of the United Nations. Eight issues are published each year. This journal is devoted to all scientific aspects of the composition of human foods, and emphasizes new methods of analysis; data on composition of foods; studies on the production, compilation and dissemination of food composition data; studies on the statistics and distribution of such data and data systems; and studies related to data use, including nutritional epidemiology, clinical research, agro-biodiversity, food security and food trade. The journal has a strong base in nutrient composition, but places equal emphasis on bioactive non-nutrients and anti-nutrients in foods.

  Food Microstructure & Microorganisms
Current history of food structure studies in North America with links to structures of foods, food-borne microorganisms, electron microscopy techniques used in food science, and contributions by guest food microscopists.

Microstructural Principles of Food Processing & Engineering
Microstructural Principles of Food Processing and Engineering, 2nd Edition by Jose Miguel Aguilera and David W. Stanley. This new edition provides a comprehensive reference on food microstructure, emphasizing its interdisciplinary nature, rooted in the scientific principles of food materials science and physical chemistry.

Growth and Structure of Meat Animals
This page gets you into information on the growth and structure of meat animals. General Body Structure; Bones, Connective Tissue & Fat; Meat Cuts and Grading; Muscle Identification; Properties of Meat; Early Development of Muscle; Postnatal Growth of Muscle; Growth of The Whole Animal; Converting Muscles to Meat.

  Nutrient Data Laboratory Home Page
The Nutrient Data Laboratory (NDL) has the responsibility to develop USDA's National Nutrient Database for Standard Reference, the foundation of most food and nutrition databases in the US, used in food policy, research and nutrition monitoring. Our database products are available to the public and scientific community. NDL is one of seven units in the Beltsville Human Nutrition Research Center (BHNRC) of the Agricultural Research Service (ARS).

  International Food Composition Tables Directory
The Directory was first compiled in September 1988. It is updated regularly, as we become aware of new publications. Most of the tables are not held by the INFOODS Secretariat, and many are out of print. However, numbers of copies are held in libraries around the world and can be often be obtained by library interloan using the reference information provided on the list founded on our site.

Special Report: Food Under the Microscope
Scientists have the power to take a gene from one organism and put it into an entirely different species. It is already having a dramatic impact on the production of new drugs and researchers are now altering the crops that are used to make our most basic foods. It should make the products on supermarket shelves tastier and healthier. But there are those who fear genetically-modified organisms (GMOs) will only damage the environment and make us ill.
